So last night I got the baking bug, and decided to pull out an old favorite. I hadn't tried it for years, but they turned out really good! My kids don't like coconut, so I left it out of 1/2 of it, but I really prefer them with coconut. Here's the recipe.
2 C. Sugar
1/2 C. Milk
1/2 C. Butter or Margarine (I always use real butter)
3 TBL. Cocoa
1 tsp. Salt
*Melt these together on stovetop, and boil for 1 minute. Then stir in...
1 C. Coconut
3 C. Oatmeal
1 tsp. Vanilla
1/2 C. nuts (optional- I didn't use them this time)
Stir all together until chocolate mixture is incorporated. Scoop into 1" balls and place on cookie sheet. Refrigerate until firm. Enjoy!

Oh man do I love these cookies! I made these all the time when I was young, and right.....about.....now... I feel that I.Must.Make.Them.
